Why a freezer beats a display counter
Seafood begins to lose texture the moment it leaves ice. Ours is frozen at the source, held at -18C, and packed in Penola with more ice than the trip needs. Thaw it in the fridge overnight and it cooks like something bought that morning at the coast.
You also get the weight you paid for. Species and net weight are printed on every pack, and nothing is glazed to make a product look bigger.
